Smooth the top surface. Place the Pavlova in oven then turn temp down to 100°F (C). Bake Pavlova for 1 hr then turn oven OFF. Open oven door very slightly and leave Pavlova inside oven till "COLD".   3. EXTREMELY IMPORTANT : Do Not remove Pavlova from oven till "COLD" otherwise you stand the risk of the Pavlova collapsing inward.....not good!!!!.
